But if you love it, please don’t be afraid to whip up a batch of this Instant Pot Chicken Sausage Seafood Gumbo.

It’s much easier than you might think, and it tastes so amazing, it is well worth the work involved!

A “big honkin’ batch of gumbo” (as a Cajun might say) really isn’t difficult to make.

It just requires a lot of cutting.

And making it in the Instant Pot or other pressure cooker really saves a lot of time.

So, if your knife skills aren’t great, prep time will probably be longer than ten minutes, and that’s okay.

Better to be careful than to cut yourself.

And if your knife skills rock, you’ll zip through your prep time lightning quick.

Either way is great, as long as you get your “mise en place” work done.

That’s a French culinary phrase meaning “everything in its place;” in other words, your prep work.

Once the cutting is done, the cooking is a breeze.

A saute here, a stir there, add some ingredients, apply some pressure, and in an hour or so, you have a feast fit for a Cajun.

Shrimp, chicken, sausage, and vegetables marry perfectly with some freshly cooked rice, and the flavor is off the charts.

In fact, a lot of families serve it for Christmas!

Ingredients to make homemade gumbo

Shrimp (peeled and deveined)
Cajun Creole seasoning
Olive seasoning
Chicken thighs (boneless and skinless
Cajun sausage
Flour
Onion
Bell pepper (green)
Garlic (minced)
Chicken broth
Diced tomatoes
White pepper
Black pepper
Cayenne pepper
Dried thyme
Salt
Brown sugar
Worcestershire sauce
Lemon juice
Bay leaves (small)
Green onions
Bunch of parsley

You’ll serve it with White rice (cooked as per package directions) Set aside.

Note: I buy my shrimp already peeled and deveined.

Can I make this gumbo without the seafood?

Yes, you can definitely make this gumbo without the seafood.

Just omit the shrimp, (or crab or other fish) and increase the amount of sausage and chicken to make up for it.

In fact, a lot of people prefer chicken and sausage gumbo without seafood and seafood gumbo without chicken or sausage.

Can you use frozen shrimp in this gumbo?

Yes, you can use frozen shrimp in this gumbo.

Just make sure to thaw the shrimp before adding it to the gumbo so that it doesn’t add too much water to the dish.

Do I have to use white rice in this gumbo?

No, you don’t have to use white rice in this gumbo.

You could use brown rice, quinoa, or even pasta.

Just make sure to cook the rice/quinoa/pasta before adding it to the gumbo so that it doesn’t add too much water to the bowl.

Is this the authentic way to make gumbo?

No, it’s not. It’s usually made from a recipe passed down from your ancestors.

This recipe is a quick and easy way to make it rather than spending the day watching the pot simmer.

But if you’ve got a hankering and don’t have a lot of time, this gumbo will get ‘er done.

So if you’re a purist about gumbo, this probably isn’t for you. 

But then again, you probably wouldn’t be looking for easy gumbo recipes or pressure cooker gumbo recipes then either, right?

I don’t have an Instant Pot. Can I make this gumbo on the stove?

Yes, you can make this gumbo on the stove.

Just simmer everything in a pot on the stove for a few hours or until everything is cooked through.

Cook it low and slow if you’re making it on the stovetop.

It will taste better the longer it simmers.

How to Store IP Chicken Sausage Seafood Gumbo from Scratch

This gumbo can be stored in an airtight container in the fridge for up to 5 days.

Reheat on the stove over low heat until warmed through.

You can also freeze this gumbo for up to 3 months.

Let thaw in the fridge overnight before reheating.

Can you eat gumbo if you’re keto or low-carb?

If you’re following the keto diet or trying to keep things low-carb, this is a great dish for you.

The stew itself is already relatively low-carb.

You may substitute xanthan gum for the flour in the roux to reduce the carbs.

And if you’re keto, be sure to check the Cajun seasoning you’ve selected to check that it is appropriate for your diet.

Now, you will most likely wish to omit serving it with rice if your diet is strict.

But this stew is so flavorful, you’ll love it even without the rice.

If you’re the only person doing keto in your household, it’s a great dish to serve because you can serve everyone the gumbo the way you made it for yourself.

Then, just make and serve the rice separately for those who want it.

It’s so much easier than making two completely different meals for yourself and your family.

How to Make IP Chicken Sausage Seafood Gumbo

As I mentioned earlier, this recipe requires some cutting for your prep work. Let’s get started with your mise en place.

Pre-Steps:

Before you get started, let’s heat up the pressure cooker.
Press “Saute” on the Instant Pot.
Allow the Instant Pot to heat.
Cut the chicken thighs into bite size pieces.
Cut the sausage into 1/4 inch slices.
Dice the onion to equal 1 cup.
Dice green bell pepper to equal 1 cup.
Chop the green part of the green onion to equal 2 tablespoons.
Chop parsley. Cover and set aside.
Add Cajun seasoning in a small bowl.
Add the shrimp rubbing to coat each one.
Set aside.

Sautee:

Saute the chicken and sausage in the Instant Pot
Add 2 tablespoons of olive oil in the pot of the Instant Pot.
Add the sausage and chicken to the Instant Pot.
Cook both until they are browned. (About 8-10 minutes).
Press “Cancel” on the Instant Pot.
Move the cooked sausage and chicken to a plate.
Set aside.

Make the Roux:

Reserve the liquid from sauteeing the chicken and sausage in the pot.
Press “Saute” on the pot.
Add the rest of the olive oil. Stir.
Also add in the flour.
Stir to blend while continuing to cook.
This mixture should have the appearance of a dark peanut butter.
Stir frequently. This is important so that you don’t burn the roux.
It may take about 10-15 minutes.

Make the Chicken, Sausage, and Seafood Gumbo:

While your gumbo is cooking in the Instant Pot, it’s a good time to let your rice cook.
Once the roux has been made, add the onions, bell pepper, and garlic.
Stir until the vegetables are slightly soft for about 5 minutes.

Add the broth, tomatoes, white and black pepper, cayenne pepper, thyme, salt, brown sugar, Worcestershire sauce, lemon juice, and bay leaves.
Stir until all ingredients are blended.

Continue to stir as you add in the chicken and sausage.
Deglaze the bottom of the pot with a wooden spatula.
Continue to scrape the bottom of the pot until there are no burnt bits stuck to the bottom.
Close the Instant Pot.
Cook on “Manual” (Or Pressure cook) mode for about 4 minutes.
“Quick” release then carefully open the Instant Pot.
Directly following the above stop add the shrimp. Stir and Close the Lid.
Set aside the Instant Pot for 10 minutes for the shrimp to cook. (No need to turn the pressure cooker on as the shrimp will cook in the existing heat in the pot.)
Open the Instant Pot.
Warm the rice.
Scoop some warm rice in individual bowls. Add hot gumbo over the rice.
Garnish the gumbo with the parsley and chopped green onions.
Serve.

    4 C chicken broth, 1 can 14.5 oz diced tomatoes, 1 tsp white pepper, 1 tsp cayenne pepper, 1 tsp dried thyme, 1 tsp salt, 1 tsp brown sugar, 1 tsp Worcestershire sauce, 2 tsp lemon juice, 2 bay leaves small, 1 tsp black pepper
  • Stir until all ingredients are blended. Continue to stir as you add in the chicken and sausage.
  • Deglaze the bottom of the pot with a wooden spatula. Continue to scrape the bottom of the pot until there are no burnt bits stuck to the bottom.
  • Close the Instant Pot. Cook on "Manual" (Or Pressure cook) mode for about 4 minutes.
  • “Quick” release then carefully open the Instant Pot.
  • Directly following the above stop add the shrimp. Stir and Close the Lid.
  • Set aside the Instant Pot for 10 minutes for the shrimp to cook. (No need to turn the pressure cooker on as the shrimp will cook in the existing heat in the pot.)
  • Open the Instant Pot.
  • Warm the rice.
  • Scoop some warm rice in individual bowls. Add hot gumbo over the rice.
  • Garnish the gumbo with the parsley and chopped green onions.
