It transforms your ordinary cup of eggnog into an eggnog cocktail that’s out of this world!
A yummy Amaretto Eggnog with Spiced Rum and RumChata
For this dynamite eggnog cocktail, I mixed Amaretto liqueur with spiced rum, RumChata, and hazelnut liquid creamer, poured it over ice and then finished it off with a sprinkling of cinnamon on top.
It looks as inviting as it tastes.
I took my inspiration from a Roman Holiday shot where you mix equal parts RumChata and Amaretto.
It tastes so good, and I thought, “why not mix it with eggnog?”
And then adding a little spiced rum just gave it that little extra somethin’ somethin’.
And behold, one of our favorite new amaretto, rum, and Rumchata cocktails came to pass!

I know that there are variations of this cocktail, one of which only includes eggnog with the Amaretto liqueur but where’s the fun in that?
No, I knew I was going to up my game when I played around with this recipe and I’m glad I did – it’s addictively delicious and incredibly easy to make.
You can whip it up in a matter of minutes.
So if you’re a fan of eggnog like I am and enjoy your festive cocktails then this Amaretto Eggnog with Spiced Rum and RumChata is definitely one to try this season,

What liquors can I use in this recipe?
A lot of times people ask me if I need to use a premium liquor for a particular cocktail recipe.
Sometimes, it really matters – like a lot. Particularly if a liquor has a particular flavor profile that’s rather unique.
But spiking eggnog is not a drink that requires a premium liquor.
So if you have it, and that’s your preference, by all means. Break out the good stuff from your liquor cabinet.
But I find that you can use what you have on hand or maybe get a more affordable bottle of amaretto or spiced rum.
The important thing is the mix of the flavor profile, and to get the most bang for your buck in this recipe, I’d recommend going with the RumChata and whatever amaretto or spiced rum you prefer.
We used Di Amore Amaretto and Captain Morgan’s spiced rum with the eggnog and RumChata and it was fantastic.
Here’s another tip: while we love this particular flavor combination, if you don’t have one of the liquors, you can always substitute brandy or bourbon.
It won’t taste the same, but it will still make a mighty fine spiked eggnog.
Ingredients to make Eggnog with Amaretto, RumChata and Spiced Rum
- Spiced Rum
- Amaretto
- RumChata
- Hazelnut Liquid Coffee Creamer, or you can use plain creamer or half and half if you prefer
- Eggnog
- Cinnamon — ground cinnamon for dusting, and a stick for garnish if you’d like
To make the drink, you will need: a measuring cup or jigger, a large pitcher, a bar spoon or other long handled spoon, and beverage glasses.
Can I make this eggnog without alcohol?
Sure! If you don’t want to make these drinks with amaretto and rum, you can always make it as a mocktail!
The easiest way to to do it is to serve eggnog with a cinnamon stick and a dusting of ground cinnamon.
But if you want to preserve the Amaretto, spiced rum, and RumChata flavors, you can do that too.
Extracts are your friend.
You can replace the Amaretto with almond extract. If you’re just doing it for a glass, 1/2 to 1 tsp (to taste) should get the job done.
If you want to make the entire pitcher of eggnog non-alcoholic, you will need to use more.
Again, this is kind of a add it to taste situation as it may depend on the strength of the extract you’re using.
To replace one cup of Amaretto, I’d start with 2 ounces of almond extract, mix it in, taste it and add about half an ounce at a time until you hit the sweet spot.
You probably won’t need more than 4 ounces unless it’s a weak extract.
You can do the same thing to replace the spiced rum with rum extract.
If you miss the flavors from the spiced rum, you can add some ground cloves or ginger to the eggnog to kick the spices up a notch.
To replace the RumChata, I like to substitute horchata for it.
Horchata brings a nice creamy, cinnamon flavor to the nog, and it just really goes great.
In fact, we combine eggnog and horchata in another one of our recipes, Cinnamon Gingerbread Eggnog.
When you’re replacing the RumChata with horchata, you may not need the extra ground cinnamon.
The horchata will do a lot of the flavoring for you.
So I like to recommend that you mix the horchata in before adding too much more ground cinnamon.
How to spike eggnog
This drink is so easy to make, and you can whip up a batch quickly.
It is so easy to learn how to spike eggnog.
The great thing is that there’s so much flavor coming from the liqueurs and the creamer that you don’t really need to do much to it by the way of adding spices.
You just mix it all up, and there’s your Christmas party’s signature cocktail!
How to make Eggnog with Amaretto, Spiced Rum, and RumChata
It’s such a cinch to make this yummy Rumchata eggnog.
In a large pitcher, combine the eggnog, Amaretto, spiced rum, RumChata and the creamer.
You’ll want to stir it well until it’s all mixed.
Once it’s stirred well, fill the beverage glasses with ice, pour the eggnog over ice and give it a light dusting with ground cinnamon.
You can also add a cinnamon stick if you’d like.
Can I make the drink ahead of time?
Yes, you can make spiked eggnog prior to an event so long as you keep it chilled.
If you’re serving at a specific time, I like to make it about an hour or two ahead of time, and keep the pitcher covered in the refrigerator.
Stir it well before serving again, and you’re ready to go.
When you pour it, just give it a light dusting of cinnamon and a cinnamon stick if you’d like.

Ingredients
- ½ cup Spiced Rum
- 1 cup Amaretto
- ½ cup RumChata
- ½ cup hazelnut liquid creamer
- 6 Cups Eggnog
- Sprinkling of cinnamon on each glass. for garnish
Instructions
- Combine rum, Amaretto, RumChata, Hazelnut creamer, and Eggnog, in a large pitcher stir until well combined.
- Add ice to each glass.
- Pour your liquor mix into the glass.
- Sprinkle with cinnamon.
