These breakfast cookies, or what some might call a “messy” energy ball as it’s more of a drop cookie than a ball, really hit the spot.

The cranberries mixed with the pumpkin seeds really complement the oatmeal and flaxseed. YUM!

Ingredients you need to make Cranberry Seed Pumpkin Oatmeal Breakfast Cookies

Before you begin, you will want to gather these ingredients:
  • Liquid Coconut Oil
  • Natural Honey
  • Rolled Old-Fashioned Oats
  • Quick Cooking Oats
  • Dried Cranberries
  • Pumpkin Seeds with the shells removed
  • Flaxseed
  • Pumpkin Pie Spice
  • Salt
  • Pumpkin Puree
  • Eggs

How to make the recipe

Makes 12 cookies

Preheat oven to 350 F.
 
Line a baking sheet with parchment paper.
 
In a small bowl add the coconut oil and honey.
 
Combine Coconut oil and honey and heat in the microwave
 
Heat in a microwave for 30 seconds.
 
Stir to combine.
 
In a large bowl combine all oats, cranberries, pumpkin seeds, flaxseed, pie spice and salt.

Toss to combine.
 
Add pumpkin puree, eggs and coconut oil mixture.
 
Stir until fully combined.

Using a 1/4 cup scoop some of the mixture. Place the scoop onto a cookie sheet. Press with your hand to flatten slightly.
 
Using a 14 cup scoop some of the mixture and put it on a cookie sheet and flatten
 
Bake for about 15-20 minutes.
 
Allow cookies to cool.

  • ½ cup Pumpkin Puree
  • 1 Eggs Room Temperature

Instructions

  • In a large bowl combine all oats, cranberries, pumpkin seeds, flaxseed, pie spice, and salt. Toss to combine.
  • Add pumpkin puree, eggs, and coconut oil mixture. Stir until fully combined.
  • Using a 1/4 cup, scoop up some of the mixture. Place the scooped cookie mixture onto a cookie sheet. Press with your hand to flatten slightly.
  • Bake for about 15-20 minutes. Allow cookies to cool before eating. ENJOY!!
