My favorite thing about this recipe is that you aren’t really making alcohol from scratch – which can be a pretty complicated endeavor.
Rather, you are just cooking up some scrumptious pumpkin-spiced flavors to combine with spiced bourbon.
In fact, the bourbon doesn’t even go in the pressure cooker!
You add it in after you’ve made your yummy flavor mix!
You can actually drink it right after you make it, but if you let it age for a while, the flavors will deepen and mellow into something amazing.
And believe me, people will be all kinds of impressed when they find out that you made this pumpkin infused Bourbon yourself.
It’s just that good!
This recipe makes enough bourbon to fill FIVE pint-sized canning jars. But if you love bourbon, you may want to consider doubling the recipe right from the start.

Can I use whiskey instead of bourbon?
There’s no reason why you can’t.
I gravitate toward using bourbon in a recipe like this because I grew up in Kentucky, and well, Kentuckians and bourbon are a thing.
So for me to make this recipe, I use bourbon – especially if I’m giving spiced bourbon as a gift.
But there’s no reason why you can’t make some yummy homemade pumpkin whiskey using your personal favorite whiskey.
You can even use scotch or Canadian whisky like Crown Royal too!
In fact, if you make this infused whiskey using Crown Royal, it makes a really nice dupe for their pumpkin spice whisky.
But frankly, this one’s better. Shhh!
And of course, you can also use this method to infuse other liquors too. This method makes a really nice pumpkin spice vodka, moonshine, or spiced rum.
Homemade Pumpkin Spiced Bourbon
This recipe starts off as a delicious, homemade pumpkin spice apple cider.
When you spike it with bourbon, it’s so good!
It’s great to serve for a Paint and Sip party too!
Homemade infused Pumpkin Spiced Bourbon is so easy to make!
Throw your ingredients in the Instant Pot, and voila!
It makes a big batch and is perfect for a making several to give as nice homemade gifts too!
Ingredients you need to make the Pumpkin Spiced Bourbon
To make this drink you’ll need canning jars to save it as it makes a nice sized batch:
5 Pint Sized Canning Jars w/Lids & Rings (sterilized).
- 1 cup pumpkin puree
- 6 cups Apple cider
- 1/4 cup White Sugar
- 1/4 cup Light Brown Sugar
- 5 Cinnamon Sticks
- 3 tbsp. pumpkin pie spice
- 4 cups spiced bourbon
To infuse the bourbon, you will need these kitchen tools:
- Instant Pot
- Measuring Cups
- Measuring Spoons
- Whisk
- Spoon or Spatula
- 5 Pint Size Canning Jars with Lids and Rings
- Funnel
Make it a Mocktail instead
When you make this drink in the instant pot, it’s a mocktail until you add the bourbon.
So long as you omit the bourbon after the drink has cooled, you may be confident that you’ll be enjoying some tasty non-alcoholic homemade pumpkin spice apple cider.
How to make Pumpkin Spiced Infused Bourbon with your Pressure Cooker
We would be remiss if we didn’t drive home this point – do not put alcohol in your pressure cooker.
The alcohol goes afterwards.
Only use the Instant Pot to make the infusion mixture – just don’t add the alcohol until after you’re done using the pressure cooker!
Combine in the instant pot pumpkin puree, apple cider, both sugars, and pumpkin pie spice.
Set on Saute mode, let pot heat up stirring occasionally.
Once sugars are dissolved place lid on.
Set the vent to sealing position.
Pressure Cook for 45 minutes followed by a Natural Pressure Release.
Once the batch has cooled completely add in the Bourbon.
Pour mixture into jars & put a cinnamon stick to each jar. Put the lids on & tighten.
Store jars in a cool dark place.
Can be consumed right away, but will get better with age.
Note: It is important that you do not add the alcohol to the Instant Pot or other pressure cooker.
