There are so many wonderful things you can do with the leftover fixings from that incredible meal.

The biggest star of the show, of course, is the turkey.

And this soup really brings out the flavor of the seasoned turkey meat and has the added benefit of being kind of like a homemade turkey and noodles soup!

In fact, if you start listing all the things you can make with turkey, you might start sounding like Bubba in Forrest Gump when he extols the virtues of shrimp.

But when the weather is chilly – or downright cold – there isn’t much that is more comforting than a big bowl of soup, especially when paired with a big piece of crusty bread.

This Leftover Turkey Soup hits all the right notes.

There’s pasta, celery, onions, carrots, potatoes, and just the right seasonings to bring all the flavors to life.

It’s so tasty, you will definitely want to consider making a double or triple batch so everyone can have seconds!

Use up your Thanksgiving leftovers

Now that Thanksgiving is over, you might be wondering what to do with all of the leftover turkey.

Well, this turkey soup is the perfect solution.

This recipe is so easy to make and it’s incredibly delicious.

Plus, it’s a great way to use up all of that leftover turkey – and carrots, and potatoes, and celery.

So if you’re looking for a tasty and easy way to use up your leftovers, then this turkey soup recipe is definitely for you.

If you have some roasted vegetables that were seasoned in a complimentary manner, add them to the soup at the end of cooking to warm them up.

You wouldn’t want to add them at the beginning because they will get mushy.

And just in case anyone needs a reminder, don’t put glazed carrots in there. The sweetness isn’t going to work.

If you have some leftover homemade or bakery bread, toast some of the bread for dipping in the broth.

Ingredients

  • 2 Lbs. of autumn colored bow tie pasta
  • 1 TBSP olive oil
  • 1/2 medium onion (chopped)
  • 4 garlic cloves (minced)
  • 4 sticks of celery (chopped)
  • 3 large carrots (peeled/sliced)
  • 1 1/2 Lbs. small potatoes (cut in half)
  • 4 C broth (chicken or vegetable)
  • 2 C water
  • Dash of Italian seasonings (4 dashes)
  • 2 + C cooked turkey
  • salt/pepper (to taste)

Equipment:
Large soup pot  or dutch oven w/ lid

Directions

Pre-Steps:

Cook the package of pasta following the directions on the back of the package.
Once cooked removed from the pot. Set aside.

Make the Soup:

Add the olive oil to the soup pot. Heat on medium-high heat.

Saute the onion until it is lightly browned, (5-7 min.)

Add the garlic cooking about 30 seconds. (Or until it is fragrant)

Carefully add the celery, carrots, little potatoes, broth, water, and Italian seasonings.

Increase the heat to high.

Bring the pot to a gentle boil.

Then reduce the heat to a medium-low.

Cover the pot.

Leave the pot lid slightly ajar.

Allow the soup to simmer for 10 minutes.

Add the turkey.

Add the cooked pasta.

Simmer the soup for another 10 minutes or so.

Add salt and pepper. (to taste)

Serve.
