I’m always on the lookout for fun green recipes for Saint Patrick’s Day and these Pistachio Watergate Cookies with Pecans really “take the cake”.
And I mean that literally, since these tasty cookies are made with a box of yellow cake mix!
Nutty Watergate Cookies with Pecans are so Easy and Quick to Make
How can you not see these cookies and think how perfect they are to serve for St. Patrick’s Day.

Why are they called Watergate cookies?
Lest you think I’ve gone all political on you with the name of these cookies – this recipe was actually inspired by Watergate Salad.
That salad – a tantalizing combination of marshmallows, whipped cream, pecans, coconut, and pistachio pudding – is pretty out of this world.
And these pistachio pecan cookies are great for anyone who wants those amazing flavors in a handy “easy-to-carry” fresh-baked form.
Another thing I love about these Nutty Watergate Cookies with Pecans is that they are really perfect for adult palates.
This isn’t to say that kids won’t like them.
If your kids enjoy pecans, they’ll love these cookies.
But these tasty treats are nice for adults who enjoy a moist and tasty cookie that isn’t overwhelmingly sweet or covered in a thick layer of frosting.
When to serve Watergate Cookies
Serve these at your St. Patrick’s Day party or other special events where green cookies would fit right in.

Ingredients to make Pistachio Pecan Cookies:
- 1 box yellow cake mix
- 1 – 4 serving size pistachio pudding
- ½ C unsweetened shredded coconut
- ½ C chopped pecans
- 2 large eggs
- ½ C canola oil
How to make Watergate Cookies:
Preheat oven to 350 degrees and line a cookie sheet with parchment paper.
Using a mixing bowl, beat together all ingredients until combined.
Scoop some cookie dough onto parchment paper or a baking mat lined cookie sheet.
Note: When you scoop the dough onto your cookie sheet, be sure to give them some space between each cookie. They will spread out a bit while they bake.
Bake the cookies in the oven for 10-12 minutes or until the cookies are lightly browned.
