Peaches are one of those versatile fruits that easily take on the flavors of the season.

This delicious summertime fruit easily adapts to Autumn flavors because of its multi-layered flavor profile.

And when you combine peaches thyme in this Peach and Thyme Gin and Tonic, you have the ultimate all-occasion late summer or early autumn cocktail.

Peach and Thyme Gin and Tonic Cocktail Recipe

An herbal peach and thyme gin & tonic

Every tantalizing sip reminds your taste buds that Autumn is on the way.

Serve up this tasty cocktail at summer and Autumn parties, cookouts, or movie nights.

It’s a wonderful choice anytime you’re looking for a cocktail that is easy to make, but classy enough to make an impression.

Serve this up to friends and they may start asking when you plan to open your own pub.

And if they offer to tip you, let them!

Why is a gin and tonic bitter?

Frankly, a Gin and Tonic is one of those cocktails that people either love or hate.

Oftentimes, that’s because some people don’t enjoy flavors on the bitter spectrum.

And gin can be a bit bitter due the juniper in the gin.

And of course, when you add tonic water – that has quinine, so that adds to the bitter taste.

But the addition of muddled peaches combined with fresh thyme until they are thick and sweet balances the bitterness perfectly.

This twist on the classic cocktail takes on a whole new identity.

If you find that your usual gin is still a touch too bitter for your liking, you can do a couple of things.

First of all, you can back off the tonic water a bit.

And secondly, you may want to try Caorunn’s gin or Hendrick’s Midsummer Solstice gin.

Both of these gins come from Scotland.

Both gins have a lighter botanical blend that, in my opinion, feels a little less juniper-y on the palate.

Ingredients to make a Peach Gin and Tonic with fresh thyme

Makes 2 drinks

fresh Peach, diced

4 sprigs fresh Thyme

2 oz Gin

Tonic Water

You will also need a cocktail shaker, muddling stick, spoon, cocktail strainer, and beverage glasses.

Can I make a Peach Gin and Tonic without gin?

Yes! You may be surprised to hear this, but you sure can!

So of course, you can make the drink without the gin.

It’s not really a gin and tonic anymore, but it’s still a tasty peach tonic.

But if you want that gin flavor without the alcohol….

Using non-alcoholic gin

There’s such a thing as non-alcoholic gin.

Whoddathunkit, right?

There are botanical drinks that use a lot of the same herbs that you find in a nice London dry gin.

There are a few that I think make a nice replacement for gin.

There’s a beverage called The Duchess that does a nice job of hitting the botanical notes you expect from gin —

Particularly if you like a gin where you can pick up notes like orange peel and cardamom.

Bonus: it’s low sugar too.

So this is a great replacement if you’re cutting back on alcohol and sugar.

Another gin alternative is called Atopia.

It also does a good job with those coriander and citrus notes, and I really like it with a splash of citrus.

So if I was making one of these peach G&Ts with Atopia, I would be tempted to also add an orange wheel to the drink just to kick up the citrus a small notch.

How to make a Peach and Thyme Gin and Tonic

You’ll begin by dicing your peaches.

Then put your diced peaches and sprigs of fresh time in a cocktail shaker.

Using a muddling stick, repeatedly smash the peaches and time together until they are well-bruised and begin to release their juices.

You really want to mash them up well.

Muddle fresh peaches and thyme in a cocktail shaker

Add in the gin and ice to the cocktail shaker.

You want the gin to mix well with the mashed peaches and thyme.

If the peaches and thyme are sticking to the sides and bottom of the cocktail shaker, you may want to use a spoon to separate them from the sides before shaking.

Shake until thoroughly mixed and chilled.

Add Gin to the cocktail shaker

Using a cocktail strainer, strain the drink into two beverage glasses. Y

ou will want to pour an equal amount into each glass.

Then top the drink with tonic water so it’s nice and fizzy.

Garnish with a fresh slice of peaches and a sprig of thyme, if desired.

Strain into two cups

We enjoy making this peach and thyme gin and tonics for Labor Day weekend brunch. It’s so nice to enjoy being able to use fresh peaches for just a little longer… If you want to enjoy this drink when peaches aren’t in season, I suggest making the syrup from frozen peaches rather than canned and simply omitting the peach slice garnish.
