Cool off with a refreshing raspberry and peach popsicle made with prosecco. They are absolutely delicious. And you can easily make some non-alcoholic ones for the kids too when you’re making some for the adults.

 

But even now, they always make me think of childhood. 

Especially when I see those big batches of inexpensive Freezer Pops you see pop up in stores as soon as the weather begins to warm.

Dirt cheap and made of nothing but flavor and sugar, they are, nevertheless, an iconic reminder of my childhood summers.

I think that may be the main reason I love these homemade raspberry peach popsicles so much.

I mean – there are many reasons I love them – but that’s the biggest.

When I enjoy one of these, I feel like a kid again in many ways.

But – I also feel like I’m doing a good job of “adulting” at the same time.

And it isn’t even because they are “boozy”!

Raspberry Peach Prosecco Pops

These delicious Boozy Raspberry Peach Prosecco Pops are full of flavor and REAL FRUIT.

They are also low in sugar.

And did I mention that they are delicious?

All you need is some popsicle molds and a blender so you can get your ingredients nice and smooth.

Layer the raspberry and peach purees in your molds and let them freeze and then enjoy!

These popsicles are so wonderful on a hot summer day, or anytime when you just want to enjoy something cold and sweet.

You can even whip up a batch for the kids by simply leaving out the Prosecco and replacing it with a bit more Sparkling Ice.

And they only have 44 calories each serving!

Popsicles aren’t simply for the young.

How do you freeze alcohol popsicles?

Making the popsicles in a disposable plastic tube reminds me a lot of the popsicles I enjoyed as a kid. Did you know they make reuseable popsicle bags too now?

 

You can make popsicles with alcohol if you use the right ratio of alcohol to juice or other liquid.

If you use too much alcohol, the popsicles won’t set up.

So in this case, less is more. I like to use about 1 oz alcohol to 1 cup liquid.

Some people push it a little more and use an ounce and a half, but I like my popsicles to have a firmer texture.

Since texture matters to me, I err on the side of caution.

When it comes to making boozy popsicles, I always recommend starting with a small amount of alcohol and see how you like it.

If you feel like you can add a bit more booze, try that on your next batch. 

Tips for freezing boozy popsicles

If you are using more alcohol in the pops, be sure to give yourself a bit more time in the freezer too. 

You may also want to note the ABV of the alcohol you are using to freeze the popsicle.

When you mix the liquor with a liquid, various mixtures will have different freezing points.

You will also need a blender, measuring cups, measuring spoons, and popsicle molds.

You may use a traditional, reuseable popsicle mold.

Or you can use a disposable popsicle tube bag.

Make it a Mocktail instead

It is so easy to make these without the alcohol.

To enjoy these popsicles without the booze, simply replace the prosecco used in each layer with more of that layer’s Sparkling Ice flavor.

But if you want it to taste like it still has sparkling wine in it? 

You can do that too?

As an alternative, you may replace the prosecco with 1/4 cup of sparkling white grape juice in each layer if you wish to maintain the sparkling wine flavor.

How to make the Raspberry Peach Prosecco Popsicles

You’ll make one layer at a time.

I like to begin with the raspberry layer because it helps to maintain the distinction between the two colors.

When you add the peach layer first, the colors tend to bleed together a little bit.

How to make the raspberry layer

To make the raspberry layer, you’ll first puree the raspberries in a blender.

Add the prosecco, sugar, and Sparkling Ice Grape Raspberry carefully.

Blend until the mixture is nice and smooth.

Fill your popsicle mold or tube until it is about half-way full with the raspberry mixture.

I say about halfway because you’ll want to leave room at the top for expansion.

So if you note where you intend to stop filling the mold or tube, fill it to half of that.

Put the molds in the freezer while you make the peach puree.

Freezing the first layer slightly will also assist in maintaining the distinct colors/ flavors in the molds.

How to make the peach layer

Now we’ll make the peach layer.

You’ll first puree the peaches in your blender.

Then add the prosecco, sugar, and Sparkling Ice Peach Nectarine carefully.

Blend it until it’s well-mixed and to a similar consistency of the raspberry mixture.

Take the popsicle molds out of the freezer and fill the molds or tubes with the peach mixture, leaving room for expansion at the top.

Put the molds back in the freezer.

You’ll need to freeze the popsicles for at least two hours for them to get firm.

Equipment

  • Blender

Ingredients
  

  • 1 cup Frozen Raspberries
  • ¼ cup Prosecco
  • ½ bottle Sparkling Ice Grape Raspberry
  • 2 tbsp Sugar
  • 1 cup Frozen Peaches
  • ¼ cup Prosecco
  • ½ bottle Sparkling Ice Peach Nectarine
  • 2 tbsp Sugar

Instructions
 

  • Make the raspberry layer - purée raspberries, Prosecco, Sparkling Ice Grape Raspberry, and sugar in a blender until very smooth.
  • Fill each popsicle mold ½ full with raspberry mixture. Freeze while you make the peach purée.
  • Make the peach layer - purée peaches, Prosecco, Sparkling Ice Peach Nectarine, and sugar in a blender until very smooth.
  • Pour peach mixture over raspberry mixture to fill molds.
  • Freeze until firm, at least 2 hours.
