When the weather gets cold, I always start thinking about soups and stews.
There is just something so comforting about tucking into a big bowl of stew, and this Easy Instant Pot Beef Stew does not disappoint.
The Best Quick and Easy Instant Pot Beef Stew
When you need some tasty comfort food, enjoy some heart homemade beef stew made easily in the Instant Pot.
Not only is it delicious – cooking beef stew in your instant pot saves a LOT of time.
Start it cooking in the late afternoon and by dinnertime, you’ll have some amazing beef stew that tastes like you’ve slaved over it for hours!
One thing that really sets this Easy Instant Pot Beef Soup apart is the addition of Maggi.
If you’ve never tried this stuff in your sauces, soups, or stews before, well, it is a game changer.
You find it in the International section of the store, and it tastes a bit like soy sauce, although there is no soy in it.
It’s basically a flavor enhancer that was created in Switzerland and it truly adds a dimension of flavor to this Instant Pot Beef Stew that is simply wonderful.
I hope you’ll take the time to look for Maggi, because it is worth the effort.
A Tip for making Beef Stew
Also, a little Pro Tip I learned a while back – when your vegetables are cooked through, it is helpful to remove them before working through the final thickening of the broth with cornstarch.
There is far less chance of them breaking down and becoming “vegetable mush” this way.
However, if you like it when the veggies are all broken down in your beef stew – feel free to carry on!
Either way, this Easy Instant Pot Beef Stew is flavorful and comforting on a cold Winter evening.
Serve it up with some biscuits or cornbread and your family will sing your praises.

Ingredients you need to make Instant Pot Beef Stew
- 1 – 32 oz container beef broth
- 6 carrots; quartered
- 4 stalks of celery; chopped
- 2 – 1lb packages of beef stew meat
- 1 white onion; diced
- 3 red potatoes; diced
- 2 tablespoon garlic
- 2 bay leaves
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 tablespoon cornstarch
- 1 teaspoon Maggi (found in the international section, or you can order it on Amazon)
How to make Beef Stew in the Instant Pot
Set instant pot to saute mode. In the instant pot, add in meat and onions.
Brown meat and turn off saute mode.
Add in carrots, celery, potatoes, and cover with beef broth.
Fill with water to fill line.
Be careful that you fill the ingredients only to the fill line.
With soups, it is especially important that you do not overfill the pot.
Stir in garlic, bay leaves, maggi, salt, and pepper.
Place the lid on the instant pot and set to high pressure for 30 minutes.
Once the pot is done counting release the pressure.
Add two tablespoons to 1/3 cup water. Whisk well.
Pour the water into the instant pot, stirring frequently.
Now set the instant pot on saute mode.
Bring to a low boil until cornstarch has thickened the broth. Then turn off saute and set to keep warm.
Pro tip: I remove all the vegetables to a large bowl then add the cornstarch. It helps so the vegetables don’t break down to mush.
It can be done either way.

- 6 Qt. Instant Pot
- Measuring Spoons
- Spoon or Spatula
- Cutting Board
- Knife
- Whisk
- Small Bowl
Ingredients
- 1 32 oz Container of Beef Broth
- 6 Carrots Quartered
- 2 lbs Beef Stew Meat
- 1 White Onion Diced

Instructions

- Place lid on the instant pot. Set to high pressure for 30 minutes. Once the pot is done counting release pressure. You may want to release the pressure a little bit at a time.
- Add two tablespoon cornstarch to 1/3 cup water. Whisk well. Pour into instant pot stirring frequently.
- Set instant pot to saute mode. Bring to a low boil until cornstarch has thickened the broth then turn off saute and set to keep warm.
