A Pinepapple Mojito is an easy cocktail recipe to enjoy all year long. Made by the glass or by the pitcher, the rum, mint, lime, and pineapple flavors blend to make a delightful beverage. Serve with a pineapple spear to make it pop for your parties.
Cut your fresh pineapple into chunks. If desired, also cut a few pineapple spears you'll use later to garnish the drinks.
In a large mortar and pestle, add in pineapple, sugar, mint leaves, and lime juice.
Gently smash ingredients together with the pestle, until pineapple is creamy and mint leaves have bruised.
Add pineapple mixture to a small pitcher or very large mason jar.
Add in pineapple juice, club soda, and rum.
Stir together gently. Taste and add more sugar if desired.
Pour over 2 ice-filled cups.
