Mojo Cuban Pork Tenderloin is great to serve anytime
This scrumptious pork dish looks great when it is sliced on a platter and dressed with herbs and orange slices. It looks at home in a variety of settings – from your family dinner table to a huge potluck or party. And if you cook it up in the wintertime, it is a nice reminder that warmer days will soon come again.
I love the flexibility of an entree like Mojo Cuban Pork. It pairs nicely with fresh vegetables, salads, rice dishes, and more. Ingredients you need to make Mojo Cuban Pork
- 4 LBS pork tenderloin
- 3/4 C Olive Oil
- 1 TBSP Orange Zest
- 3/4 C Pulp-free Orange Juice
- 1/2 C Fresh squeezed Lime Juice
- 1 C Cilantro, chopped
- 1/4 C chopped mint leaves
- 3 TBSP minced garlic cloves
- 2 tsp dried oregano
- 2 tsp ground cumin
- 1/4 tsp kosher salt
- 1/4 tsp ground black pepper
How to make Mojo Cuban Pork
- Using a large bowl, combine all ingredients and mix until combined.
- Place the pork loin into a deep dish.
- Pour the sauce over the pork and cover with foil.
- Place into the fridge to allow the pork to marinate overnight.
- The next day:
- Preheat oven to 425 degrees and place a wire rack over a baking sheet. Or you can use a roasting pan!
- Place the pork on the rack.
- Roast the pork for 30 minute in the oven and then reduce the temperature to 375 degrees.
- Continue to roast the pork for 1 hour and 30 minutes or until the meat is tender.
- Transfer to a cutting board and cover the pork with foil and allow it to rest for 20 minutes.
- Carve the pork and serve!
