Instructions to Make Mojo Cuban Pork
Using a large bowl, combine all ingredients and mix until combined.
Place the pork loin into a deep dish.
Pour the sauce over the pork and cover with foil.
Place into the fridge to allow the pork to marinate overnight.
The next day:
Preheat oven to 425 degrees and place a wire rack over a baking sheet. Or you can use a roasting pan!
Place the pork on the rack.
Roast the pork for 30 minutes in the oven and then reduce the temperature to 375 degrees.
Continue to roast the pork for 1 hour and 30 minutes or until the meat is tender.
Transfer to a cutting board and cover the pork with foil and allow it to rest for 20 minutes.
Carve the pork and serve!
