Make meringue cookies for any occasion
Some people like to call these charming cookies leprechaun poop, but we think calling them kisses are more fun!
After all, their shape is kind of like a Hershey’s kiss.
While we’ve made our meringue kisses for St. Patrick’s day with a cute green swirl, you can easily substitute any color palette you like to go with any occasion.
These meringue kisses are perfect to serve year round, and are particularly festive for weddings and holidays.
Variations on the recipe:
- Using multiple colors, make unicorn kisses in a variety of beautiful pastels – you can even add edible glitter and a candy unicorn horn
- Use your favorite team’s colors for game day snacks
- Use pretty pinks and reds for Valentine’s day
- You can tint the whole meringue to coordinate with one’s wedding colors for a wedding or shower
- Make red, white, and blue kisses for the 4th of July
- Shape the meringues like ghosts and put candy or icing eyes on them for Halloween

Ingredients you need to make Leprechaun Meringue Kisses
Prep: 20 minutes Cook: 1 hour Servings: About 30 cookies
- 3 egg whites
- 1/2 cup sugar
- 2 teaspoons vanilla
- food color (colors of your choice)
- 2 teaspoons citric acid
How to make Leprechaun Meringue Kisses
In the bowl of a kitchen aid mixer, add the egg whites.
Beat on medium speed until they start to bubble.
You will want to beat the meringue until it thickens and starts to bubble a bit. You can see how it’s thick enough to hang onto the whisk.
Add in citric acid and mix on medium speed till egg whites start to stiffen.
Slowly add in the sugar, tablespoon by tablespoon.
Turn to a high speed and let beat until it’s thick and you have stiff white peaks.
When the meringue begins to form stiff peaks like this, it’s ready to put into the piping bag.
Make sure to take the mixture and rub between two fingers.
If you feel sugar granules then beat more until you don’t feel the sugar.
Preheat oven to 200 degrees F.
In a piping bag add with a skewer a tad of food coloring.
It’s easier to add the meringue mixture to the pastry bag if you use a large cup to hold the bag open like this.
Place meringue mixture into a piping bag.
Pipe meringues onto a baking sheet lined with parchment paper.
The meringues will cook with the oven door open.
They need a gentle heat. It’s almost like they are drying rather than being baked.
Place in oven with oven door cracked.
Bake for 1 hour or until the meringues lift off the parchment paper easily.
Let cool before serving.

Leprechaun Meringue Kisses

- Measuring Cup
