In the bowl of a kitchen aid mixer, add the egg whites. Beat on medium speed until they start to bubble. Add in citric acid and mix on medium speed till egg whites start to stiffen.
Slowly - tablespoon by tablespoon - add in the sugar. Turn to high speed and beat until egg whites are thick and form stiff peaks.
Take a bit of the mixture and rub between two fingers. If you feel sugar granules, beat more until you don't feel the sugar.
With a skewer, add a bit of food coloring into a piping bag.
Place meringue mixture into the piping bag. Pipe meringues onto a baking sheet lined with parchment paper.
Place in oven with oven door cracked. Bake for 1 hour or until the meringues lift off the parchment paper easily.
Let cool before serving.
