What kind of apples do you use to make a sharlotka cake?
The secret is the apples.
Granny Smith apples work best because they are a bit tart, making them the perfect baking apples for most desserts.
They are really the star of the show in this cake, especially when they bake up soft and sweet, surrounded by a moist and delicious cake.
If you are striving to eat healthier, but still looking to satisfy your sweet tooth, Apple Sharlotka Cake is actually a decent choice.
There is no butter in the batter, and no frosting either.

Serving the Sharlotka
A sharlotka is delicious for just about any occasion.
I like to serve it like a coffee cake.
It’s a traditional recipe, but it’s not associated with a particular holiday or event.

Ingredients you need to make an Apple Sharlotka Cake
- 6 large eggs
- 1 C sugar
- 1 1/3 C flour
- 1/2 tsp baking powder
- 1 tsp pure vanilla extract
- 4 large granny smith apples, peeled and chopped into 1/2 inch chunks
- 1/4 C powdered sugar for dusting
We like to use a springform pan for this cake.
It’s easy to remove the cake, particularly if you will be serving it on a cake stand.
How to make the Russian Apple Cake
Preheat oven to 350 degrees.
Line bottom of springform pan with parchment paper and spray the sides and bottom with baking Pam spray.
Using a standing mixer, whisk together the 6 eggs on high speed until foamy.
Gradually mix in the sugar and continue mixing until stiff with peaks.
This takes about 8-10 minutes.
In a medium bowl, whisk together the flour, and baking powder.
Gradually fold in the dry ingredients into the wet using a rubber spatula until combined.
Fold in the chopped apples, leaving 1 cup for topping, and vanilla until combined.
Pour batter into springform pan and spread remaining chopped apples on top.
Bake in the oven for 55 minutes.
Remove from the oven and allow the cake to cool completely before removing the sides of the springform pan.
When you’re ready to serve it, dust powdered sugar on top and enjoy! It’s delicious to serve with a freshly brewed cup of coffee or tea.
