Apple Pie Sugar Cookie Cups are a delicious treat perfect for Autumn and Winter. They are great for holiday meals, Christmas parties, cookie exchanges, and would be a welcome addition at potlucks and family gatherings, too. If you love apple pie, I bet you’ll love these even more!
Preheat oven 375 degrees. Lightly spray a 12-24 mini muffin pan with cooking spray.
Follow the instructions on the sugar cookie package for drop cookies.
Roll dough into small balls. Place into muffin pan. We used dough that was cut into each cookie size and just rolled each cookie size into a ball.
Bake for 10 minutes. Immediately remove from oven and press a shot glass into the cookie to make the opening. We sprayed the shot glass with cooking oil every few cups.
Place cookie cups on a cooling rack and let cool.
Fill the cups with apple pie filling and top with cinnamon.
Drizzle with icing if desired.
Instructions for Icing
Add a little bit of water to the powdered sugar and stir. Add water a little bit at a time until it reaches your preferred consistency. If you like it thick, use less water. If you like your icing thing, use a bit more.
