When Springtime days grow warmer, my thoughts start turning to salads like this amazing Italian Prosciutto Salad.

Healthy and refreshing, this wonderful dish is so full of flavor, you’ll have to keep reminding yourself that you are eating salad.

It’s also a great salad to take to summer potlucks, 4th of July barbecues, and any time you are wanting something cool, fresh, and delicious for lunch or dinner.

It’s like your favorite charcuterie board in a salad bowl!

Serve this salad just as it is, or pair it with pizza or bread sticks or even a nice fruit plate.

Really, when you start with a dish this delicious, there is no wrong way to serve it!

This salad has a nickname. It’s also known as an Italian Sub Salad.

I like to think that it’s like taking all of your favorites from a yummy Italian sub and making it into a healthy salad.

And if you really need that sub sandwich taste, the salad is great served with some yummy bread sticks on the side.

Ingredients you need to make an Italian Prosciutto Salad

  • 1 1/2 cups spring salad mix
  • 2 slices prosciutto di parma
  • 5 slices pepperoni
  • 1 tablespoon peperoncinis
  • 1/3 cup red onion
  • 3 kalamata olives
  • 3 Sicilian green herb olives
  • 1/4 cup dressing
  • 1 tablespoon parmesan; optional for topping

How to make the Italian Sub Salad

Start by washing and drying your greens.

Then put them into a serving bowl or plate. 

Slice red onion in to half moon rounds. Place on top of salad. 

Slice pepperoni and add to salad.

Place prosciutto and olives on the salad.

Top with peperoncinis and/or parmesan.

Drizzle on dressing of choice and serve.

NOTES: Top with parmesan and dressing of choice.

I like to serve it with a vinaigrette or creamy Italian dressing.

Ingredients
  

  • 1 ½ cups Spring Salad Mix
  • 2 slices Prosciutto di Parma
  • 5 slices Pepperoni
  • 1 tbsp Peperonchinis
  • cup Red Onion

  • 1 tbsp Parmesan Optional, for Topping

Instructions
 

  • Wash salad and place into a bowl or plate.
