If you’re a fan of a mojito, you probably know that there are so many delicious ways to enjoy a mojito.

Ingredients you need to make a Pineapple Mojito Cocktail
Serves 2-4 (depending on size of drink desired)
- ½ cup of fresh pineapple, cut into chunks
- 1 tablespoon of sugar, or as desired
- 6 mint leaves, chopped
- ½ lime, juiced
- 2 cups of pineapple juice
- 2 cups of club soda
- 1-2 ounces of rum
- ice
We love using a marble mortar and pestle for this recipe, but a wooden one will do just fine too!
If you don’t have one, and want to add it to your favorite bar tools, here’s a similar marble mortar and pestle.
Can you make a pineapple mojito without alcohol?
Yes, you can enjoy a yummy non-alcoholic pineapple mojito.
Simply omit the rum and if you like the drink a bit sweeter, add a bit more pineapple juice.
If you like it a bit more fizzy, add more club soda.
Can I make the drink by the pitcher?
Absolutely!
Multiply the drink by how many servings you need considering the size of your pitcher or beverage dispenser.
Then mix the drink with all ingredients except for the club soda.
It’s best to top off the drink with the club soda right when you serve it so it’s nice and bubbly.
Can I make a pitcher drink and still serve a mocktail?
Yes! It’s really easy.
You can either make up two batches, or if you only need a small amount of the mocktail, you can add the rum when you’re serving.
Then to make a mocktail for someone, pour their drink from the pitcher prior to adding the rum.
Just be sure to reduce the rum added to the pitcher by .5 to 1 ounce to keep the flavors balanced — unless of course you like your drinks strong.
How to make a Pineapple Mojito
Cut your fresh pineapple into chunks.
If desired, also cut a few pineapple spears you’ll use later to garnish the drinks.
In a large mortar and pestle, add in pineapple, sugar, mint leaves, and lime juice.
Gently smash ingredients together with the pestle.
You want the pineapple to be creamy and mint leaves gently bruised.
Add pineapple mix to a small pitcher or very large mason jar.
Next add in pineapple juice, club soda, and rum.
Stir together gently.
Taste and add more sugar if desired.
Pour over 2 ice filled cups.
Notes: For a fun twist, add in a spear of pineapple and a few thin slices of lime to your cups!
