Pull your leftover watermelon out of the refrigerator the next day, mix up this salad recipe, and you’ve got the perfect light lunch.

It’s my go-to “day after I ate too much” salad.

Ingredients

A watermelon, cucumber, feta cheese, and fresh basil with a knife on a white cutting board.

1 small watermelon, about 4 cups cut into cubes

1 large cucumber, sliced

3 ounces of feta cheese, cut into cubes

1 tablespoon fresh mint chopped

1 tablespoon fresh basil chopped

1 lime, juiced

Kosher salt and black pepper to taste

Olive oil to taste

How to Make Watermelon Feta Salad

This salad could not be simpler to make. 

First you cut the watermelon in half.

Make the cut across the center of the melon if it’s oval shaped.

Then remove the rind.

The easiest way to do that is to place the flat side of your half melon on your cutting board.

Then, using a sharp knife, make long slices from the center of the melon to the board all the way around.

Then chop the watermelon into chunks.

You can make the chunks whatever size you like.

You can use large chunks or make them bite size.

If you prefer, you can also use a melon baller to make watermelon balls.

Now get out your mixing bowl and add the watermelon, cucumber, feta cheese, mint, and basil.

Mix and add the juice of one lime and pour it over the salad as the juice will act as your dressing.

Add a touch of salt and pepper to taste.

The salt really brings out the juiciness and sweetness in the watermelon.

Drizzle with touch of olive oil.

Variations on the recipe

There are a few things you can do to mix up this recipe that are really tasty.

You can add a splash of balsamic vinegar. 

You can leave the cucumbers out of the salad.

Honeydew and / or cantaloupe are great additions to the salad or to use in place of the watermelon.

You can use mozzarella instead of feta if you prefer a less salty cheese.

You can add some finely chopped red onion.

And if it doesn’t taste like soap to you, you can substitute cilantro for the basil for a different spicy flavor.

Ingredients
  

  • 1 small watermelon about 4 cups cut into cubes
  • 1 large cucumber sliced
  • 3 ounces of feta cheese cut into cubes
  • 1 tablespoon fresh mint chopped
  • 1 tablespoon fresh basil chopped
  • 1 lime juiced

Instructions
 

  • Cut the watermelon into chunks.

  • Add the watermelon, cucumber, feta cheese, mint, and basil to a large serving bowl.

  • Mix well.
  • Add the juice of one lime.
